I’ve made 100s of these with my mom for Weddings when she did a catering side- hustle. They’re a great low carbohydrate snack/meal and a good way to use eggs that aren’t fresh enough to poach.
These are common finger food for receptions and parties. If I’m on a low carb diet and I see these at a party, I feast on them to keep the diet going π
Ingredients
5 Hard boiled eggs
3 Tbsp Mayonnaise
2 Tsp Dijon mustard
Paprika to sprinkle
Method
Cover your eggs in tap water in a pot and bring to boil. Boil for 15 minutes, let sit in the hot water while covered till the water is lukewarm.
Place your warm eggs in cold water for 10 minutes to further cool. Peel all your eggs, doing your best to keep the egg whole.
Cut your eggs in half, by the cross section on the longest round of your oval shaped egg. That will leave you with 10 deviled eggs.
Scoop out your yolk into a bowl.
Crush your yolks as fine as possible with a fork. You can run these through a potato ricer for less lumps.
Combine your minced yolk with mayonnaise and dijon mustard to form a smooth and creamy paste.
Spoon this paste into the whites of your eggs. You can be fancy and use a decorative piping bag.
Sprinkle your deviled eggs with paprika for more flavor.

Store these in the fridge, or eat them all!
