Make your mash potato interesting and more nutritious by adding other vegetables. My vegetable mash usually includes vegetables that are easy to hide 😉
2 medium potatoes
1/2 butternut pumpkin
8 chopped brussel sprouts
1/2 cup parmesan cheese
1/4 cup fresh chopped parsley
3 cloves minced garlic
Butter, sour cream salt and pepper to taste
Boil all your vegetables in a pot together, season your water with a bit of salt.
Boil till everything is soft and mashable, and mash it all together with a masher. To your mash add your butter, sour cream, garlic, parmesan cheese and chopped parsley. Mix this together, taste, and add salt and pepper to your taste.
Serve with a steak and gravy, or a side to a roast meat or chicken family dinner.
