Pancakes!

Quick and easy, can be made vegan or not, gluten free, but always good, especially sweet with fruit and vanilla ice cream.

I made a small batch in a cereal bowl.

  • Self rising flour (1/2 cup)
  • 1 egg
  • Milk (1/4 cup)
  • Melted butter
  • Sugar to taste
  • Salt 1 pinch

mixed it all together to form a thick batter. I fried tiny pancakes in rice bran oil and a nob of butter.

Cooked apples made on the stove top and vanilla ice cream from the store.

Topped with Canadian maple syrup.

In the Caribbean growing up, pancakes were made savory and served with ketchup, sardines and a breakfast cucumber salad. I like this way better, because I have a huge sweet tooth.
