Caribbean Butter Flaps or Coco Bread

This bread is popular Caribbean-wide, Jamaicans call it coco bread because sometimes it’s made with coconut milk and grated coconut. You can replace coconut milk with any other milk to make this bread and just call it a butter flap.

This bread was a scarce treat as my mom and aunts don’t like butter. I might buy myself one with pocket change as a teenager at a local bakery, but I wouldn’t call it a staple. I thought I’d give my Aussie family a try of this bread and so I made some. It is easy to make and I used coconut milk.

Ingredients

  • 3 Cups all-purpose flour
  • 2 Cups Coconut milk
  • 2 Tbsp Sugar
  • 1 tsp salt
  • Active dry yeast
  • Butter (room temperature)
