Pasta Bolognese

This is something I started making in Australia. My family’s favorite pasta meal, usually served on top of spaghetti and covered in cheese.

This is a tomato based meat sauce, a good mince beef recipe to add to the menu. I add bacon to make it tastier.

Ingredients

Diced brown onion
Diced large carrot
4 cloves of crushed garlic
Green capsicum
Red capsicum
1 stick diced celery
Basil
Parsley
Oregano
Thyme
2 bay leaves
2 cans diced tomatoes
3 tbsp tomato paste
2 tbsp balsamic glaze
Salt and pepper to taste
3 cups of chicken stock
Olive oil (to saute’)
Porccini Mushroom powder
1 Tbsp paprika
Pinch of cinnamon
Pinch of nutmeg
Tsp brown sugar
500g mince beef
200g diced bacon

Diced Vegetables

In a sauce pan, Saute’ all of your diced Vegetables until soft in olive oil, about 5 minutes on medium heat. Add your diced bacon to fry.
Add the mince beef to your vegetables and bacon saute’ till the mince is brown. Make sure the mince stays loose and doesn’t clump up into little meat balls.

Once the meat is brown, add your cans of diced tomatoes and your herbs, stir them in.

Add the rest of your ingredients, mixing and stirring after each addition. Simmer this sauce on low heat for 45 minutes once all of your ingredients have been mixed in. The sauce should thicken and reduce. Your sauce should be a rich red color and coat a spoon. If it’s still thin and runny, add another tablespoon of tomato paste and simmer for another 20 minutes.

Taste your sauce and add salt and pepper to taste.

Serve over pasta with parmesan cheese on top.
