Soup Joumou

Soup JouMou

A pumpkin based beef soup native to Haiti.

Haiti was colonized by the French in the 1600s, enslaved Africans were forced to cultivate squash that forms the base of the soup, the Joumou, which means pumpkin or squash in French. The natives and Africans were banned from eating this soup by the French, even after cultivating the crop. Meals prepared my them, they were not allowed to eat.

Haitians freed themselves from French colonization in 1804, January 1st. They made this soup in defiance and continued to make it every year on January 1st.

Ingredients

Oil to sauté

Steamed and puree squash

Beef bone-in cuts 2 lbs (slow cooked, till tender)

7 cups of Water

Celery

Carrots

Potatoes

Epis:

Scallions, parsley, seasoning peppers, brown onion, thyme, garlic, red chilli

Macaroni pasta 1 cup

Cabbage, corn, spinach, juice if 1/2 a lime

Salt and pepper to taste

Butter

Palm rolled Caribbean Dumplin (as many as you like)

I add Zucchini because it’s in season where I live and I love it.
