Tasty tip Tuesday! Make a quiche with left over vegetables

We had friends over for dinner and I made too much steamed vegetables.

Make a quiche with your left over cooked vegetables.

Get your left over vegetables together
Blind bake your pastry, this is store bought frozen short crust pastry.
Place your vegetables in your crust. Add bacon, and cheese, pour over your egg mixture.

Egg mixture: 6 whole eggs, 100g cream, 1/4 cup milk, salt and pepper to taste. Whisk together, pour over vegetables in crust, make sure it’s even.

You can use any vegetables you have. Focus on eating what is in season and what is on sale for the cheapest price.

Bake your quiche for 45 minutes @ 180 C fan forced.

Top with grated cheese.
